21 Day Fix: Peanut Butter and Jelly Cookies (PB&J Cookies)

These sweet treats are great with coffee for brunch or as a dessert by themselves! This recipe yields 4 cookies, which makes a great 21 Day Fix serving size.

Ingredients
  1. 1/2 banana
  2. 1/4 uncooked rolled oats
  3. 2 t peanut butter
  4. Coconut oil spray
  5. Small berries (5 or so blueberries, raspberries, etc.)
  6. Drizzle of honey
For cookies
  1. Preheat oven to 350.
  2. Mash banana with peanut butter. Add oats and stir until fully incorporated.
  3. Lightly grease rimmed baking sheet (cookie sheet) with spray coconut oil.
  4. Drop spoonfuls of batter onto baking sheet in four equal portions. Batter will be wet. No worries!
  5. Using a fork, make a small indent/well in the center of each cookie.
  6. Bake for 35 minutes or until golden.
For jam topping
  1. In nonstick pan, reduce berries over medium heat. Mash and add drizzle of honey.
Assembly
  1. Remove from oven and spoon jam onto each cookie.
  2. Allow to cool.
  3. Enjoy! 🙂
