21 Day Fix: Baked Cheesy Buffalo Dip

Football season is upon us and it’s time for some munchy crunchy HEALTHY snacks! I actually had this whole platter for lunch today since the whole thing is only 1 red, 1/2 blue, 1 yellow and 1 green!

Double, triple and beyond to feed a group of hungry party goers or tailgaters.  Don’t like warm dip?  No worries.  It’s amazing cold, too.  Just mix and eat — don’t bake at all!

Baked Cheesy Buffalo Dip
Serves 1
Spicy and cheesy, this baked dip is sure to please your belly. :-)

Ingredients for Dip
  1. 1/2 red container shredded chicken
  2. 1/2 red container plain Greek yogurt
  3. 1/2 blue container shredded cheddar cheese
  4. Tobasco or Cholula to taste
Ingredients for Chips
  1. 2 corn tortillas
  2. EVOO (optional)
  3. Spices such as Mrs. Dash Fiesta Lime (optional)
  4. Serving with 1 cup of raw veggies for additional crunch (celery, cucumber slices, carrots, etc.)
Instructions for Dip
  1. Preheat oven to 350 degrees.
  2. Mix chicken, Greek yogurt, Tobasco and half of cheese together.
  3. Pour into ramekin.
  4. Top with remaining cheese.
  5. Bake until heated through, 15 - 20 minutes.
Instructions for Chips
  1. Preheat oven to 400.
  2. Spray both sides of two corn tortillas with oil (optional) and rub with spices (also optional). I use Mrs. Dash Fiesta Lime.
  3. Cut each tortilla into 8 triangles.
  4. Place on rimmed baking sheet.
  5. Bake for 10 minutes.
  6. Dip dip dip with the chips and celery. Put in your belly.

  1. 1 red
  2. 1/2 blue
  3. 1 yellow
  4. 1 green
Great Tip
  1. Don't like warm dip? No worries! Don't bake it at all. Just mix it up and chow. It's great cold, too!

      Any oven-safe ceramic or glass container will get the job done, Connie. You could even make a whole casserole dish of it for a party. :)

      I don’t know them all, Jess! I know green and purple are 1 cup each for sure. I’m not sure about the rest, though. I just use them as measuring tools themselves.

    Love this website!!!!! I was thinking that this dip would make an excellent pizza option spread onto a Flatout for a lunch or dinner option!

      The water was probably from the Greek yogurt separating from the heat. We just mix it up and it blends back together. If you don’t like the texture, you could try cooking it lower and slower to see if that helps.

    Tried this today and it was so good! I can’t believe this is isn’t a cheat meal! My first round of the fix I did well but it was sooo boring with my go to boiled eggs, cottage cheese etc. I decided to try new things so I will want to stick with this lifestyle and recipes like this will make it easy. I also downloaded your 2nd cookbook (you had me at mac & cheese) and can’t wait to try those as well. Thank you so much, jean! :)

    This is absolutely delicious! Made this for monday night football & everyone -even the men-loved it! Then I ate it for lunch on a whole wheat roll for lunch! Can’t get enough of it!

      I honestly just shake and taste. It depends who is eating it at the time. I make it really mild, if either of the kids are eating it. Our toddler had pretty severe acid reflux as a baby and I’m gun shy with his food. If it’s just for me, shake shake shake, ha!

    This recipe looks amazing!! I would love to make this over the weekend. Do you think salsa would be okay to add instead of hot sauce or should I go out and get hot sauce?

    Totally gonna eat this with cukes!

      Technically Red Hot isn’t 21 Day Fix friendly, probably the sodium, but I bet it would work just fine in moderation! :)

    Tried this today, but I put pasta with it. It was delish even warmed up for a later snack. Will definitely keep this recipe for later.

      Hey, Liz! I don’t. I only calculate by portion containers. You could plug it into an online nutrition calculator, though. There are lots of them (free) out there.
